Spindletop Chocolate Mousse Pie

1 package Keebler fudge cookies
½ stick unsalted butter, melted
1 12-ounce package semisweet chocolate chips
4 egg yolks
2 eggs
3 egg whites
3 cups heavy cream, divided
1 teaspoon vanilla

In a food processor, fitted with a steel blade, bend cookies and butter. Press cookie crumb mixture to form a pie crust in a 10-inch spring-form pan. Bake for 10 minutes in a 350° oven. Melt chocolate chips in the top of a double boiler. Beat 4 egg yolks and 2 eggs together and slowly add the melted chocolate. Beat 3 egg whites until they form stiff, but not dry, peaks. Whip 2 cups of cream and add the vanilla. Fold together the chocolate mixture, egg whites and whipped cream. Pour into pan. Whip remaining cream and spread over pie. Sprinkle with chocolate and refrigerate. Serves 8-10.
